Apulian cuisine already offers a wide range of dishes based on pasta, vegetables, fish, pulses and fresh cheeses. All year round we offer cooking courses that will reveal the secrets of Apulian cuisine.
Each dish will be introduced by a family story or local tradition. You will learn how to make typical orecchiette pasta with fresh tomato sauce cooked over an open fire and bread balls as Apulian grandmothers and mothers do every Sunday in their family kitchens. The food and wine culture of Slow Food is encountered here every day.
Our day begins in the morning or afternoon and ends with a convivial lunch or dinner. In the cooking workshop we will learn about the basis of pasta, namely durum wheat flour and its varieties. We will create a traditional dish using only the freshest seasonal ingredients and traditional cooking methods such as fire.
Apulian cuisine will amaze you with its simplicity and unmistakable flavours. Each dish will be a feast of fresh seasonal produce, cooked with creativity to make them tasty and transformed into dishes full of flavour and tradition.
